Wahoo is a scombrid fish found worldwide in tropical and subtropical seas. It is best known to sport fishermen, as its speed and high-quality flesh make it a prize game fish.
Its body is elongated and covered with small, scarcely visible scales; the back is an iridescent blue, while the sides are silvery, with a pattern
of irregular vertical blue bars and have razor sharp teeth.
The flesh of the wahoo is white to grey, delicate
to dense, and highly regarded by many gourmets. The taste is similar to mackerel, though arguably less pronounced.
The Wahoo is a real nice-lookin’ fish, right? But she sure does put up quite a fight! I remember we were a good 40 nautical miles off the coast of Captiva and had been pulling in a handful of barracuda and couple amberjacks. One of our customers felt a sudden jerk on his line and we knew it wasn’t your garden variety fish. It had to be a good half hour of reeling and tugging but he finally got the fish in close to the boat. Now bringing her on board was a little tricky (gotta watch those teeth!) but no sweat, this guy had the trophy of a lifetime to bring home to Virginia!
